Best Moist Sponge cake with cream cheese frosting

Moist Sponge Cake

Hello there,

Today, I will be sharing how to make the best-ever moist sponge cake.I made this sponge cake recently for a summer get-together and it was really nice and believe me anybody can make this cake.It was my first time and it turned out  brilliantly and was a real show-stopper.

Let's get cracking, you will need the following:


For the Sponge

  • 225g Soft Butter 
  • 400g Caster Sugar
  • 4 Eggs
  • 310g Plain Flour
  • 250ml of  Milk
  •  2 tbspoons Vanilla Extract
  • 2 teaspoons Baking powder 

For the Cream Cheese Frosting

  • 100g Butter 
  • 250g Cream Cheese (I used Philadelphia cream Cheese)
  • 600g Icing Sugar
  • Rainbow Sprinkles (optional)


Preheat your oven and set to 180 °C
-Mix the sugar,butter and Vanilla Extract together in a large bowl
-Then add the eggs one at a time to the mix
-Add the baking powder to the flour and sift it, and add to  the mixture and mix
-Then add your milk (let it be at room temperature)
-And lastly add a table spoon of honey for extra flavour and taste
-Divide the  batter equally into three 20 inche baking tins that have been lined with parchment paper and bake for 40 minutes

For the Frosting:
-Strain the excess water from the soft cheese
-Melt the butter and add with the cheese.Ensure the cheese is fully incorporated with the butter
-Sift the icing sugar and add to the mixture 150g at a time until thick
-Then leave to thicken/set a bit in the fridge for an hour (preferably overnight for a better taste)

Use the cream cheese frosting between the two layers and for the outside of the cake, when done use some rainbow sprinkles for the finishing touch.
